Visa Refusal (Greece)

So, I had applied for the Schengen Visa in the Greece Consulate and got a refusal from them today. The justification provided by them - the information submitted regarding the justification for the purpose and conditions of the intended stay was not reliable.

I and my fiance were travelling from New Delhi to Greece. We had the whole itinerary chalked out. We provided all the documents

Valid and Old Passports
Visa Application
Two Photographs
Personal Covering Letter
Proof of Accommodation
Itinerary
Travel Insurance
Flight Ticket
Latest 3 month PaySlip - Both
Latest 3 month Bank Statement - Sufficient Funds: Both had above a mid 6 figure mark in our respective bank account.
Last 3 year ITR - Both
NOC / Leave Letter from the Company - Stamped and Signed. As I work from home, I had to get even this notarized as they gave me a scanned copy which I had to get printed.
NOC Parents Notarized for Honeymoon
Parents Id Notarized
Marriage Invitation
Passport Photocopy
Aadhaar Photocopy
Affidavit for our Honeymoon as we are still not married. On Stamp paper and Notarized

Could someone tell me what to do next. The refusal says that visa based on this reason is not subject to the right of appeal.

How to exactly know why the visa has been exactly refused? When can I re-apply for the visa again? Will this cause any issue in grant of Schengen Visa in the future?

EDIT:
Updated the funds section
Possible Rejections that I can think of:
1. We both signed individual affidavit for proof of relationship. Ours was one application, but we didn't attach a photocopy in each other's docket.
2. On our parents notarized NOC, we got the return date printed wrong. We had corrected it using the fluid and got our parents to sign again near the correction. Had to do that because they were already notarized.
3. We had said that we will be doing island hopping using ferry. But we didn't add ferry tickets because we were told on entry and exit tickets are required.
