Confessin’ (That I Love You) Chords?

I came to know this standard through Monk’s rendition and was considering doing a recording. When doing standards I like to get to the heart of a tune and try to figure out how others came to the changes they made (chord substitutions, etc) rather than copy them outright. But it seems like no two versions of this thing are the same, and it’s way beyond just transposing the key. Key isn’t really an issue for me. But from Monk to Louis, Peggy Lee,Willie Nelson, Tony Bennett, Ellington, the list goes on - they’re all vastly different. The only real common thread is that several of them start in G. Is there a generally accepted chord sequence for this thing from which I can arrive at my own embellishments or does everyone essentially just rewrite the song when they do it?
