Possibly a Mexican dish

So years back I used to babysit for a Mexican family and they would let me eat whatever they had when I was working so one day I looked at some leftovers they had and it was the best thing I’ve ever ate. It was something shaped like a tostada but it was filled with some kind of potato filling and they were plain but you could dress them up with what I think was cabbage and cream and tomatoes and whatnot. I loved it so much It was so simple yet so delicious and filling. Never asked what it was and never seen it again in my years later. I dream of having one again 😔
