What server should I play on?

I know there’s vanilla and modded stuff. I kind of wanna just understand the game before I get in the mods so I wanna play on a vanilla server. I’ve only played about 50 minutes worth of the game cuz whenever I’m on a random server the stability is so bad it’s unbearable. Any suggestions?
